Egg Casserole

I put together an egg Casserole, I thought I would share the recipe. This tastes really good, a lot like pizza. I wont give specific amounts on most of the ingredients, because it is all up to you, you can use any amount that you like. There are no rules in cooking, the only rule is that it has to taste good to you.

Ingredients: Eggs, Cheese, Hash browns, Mushrooms, Onion, Corn Tortillas, Olives, Jalapenos, Salt, Butter, Pepper

I used a 9″ cake pan for my casserole. I buttered the pan. I then fried 4 hashbrowns in a skillet, set them aside. I fried some medium diced onion and sliced mushroom in the skillet. I seasoned them with garlic powder and salt. I shredded an 8oz block of Vermont extra sharp Cabot Cheddar cheese.

I first broke up the hashbrowns and layered them in the bottom of the pan. I put on a small layer of cheese. I then added all of the diced onions and mushrooms. I spread that layer out. I added a thin layer of cheese on top of that. I then took 3 corn tortillas and cut them into small squares, I layered them. I then put the rest of the cheese on top and spread it out.

In a bowl I beat 8 eggs with salt and pepper, you can use the amount of eggs that are right for you, less would work fine. You can also use less eggs and mix them with milk if you wanted to. I then poured it over the ingreedients. Being careful as the pan was so full, It wasn’t soaking in very easily. You have to make small spaces with a fork for it to flow in. I then topped it with olives and thin sliced jalapenos. Cover it with tin foil before you put it in the oven.

The normal cook time on this can vary. Most will cook it on 350 for 40 minutes. I cooked mine in a small countertop toaster, and it took about an hour and 10 minutes.
